If all the hotels in CH are fully booked, I'm not sure you want to go to Cameron Highlands, with so many people there 
Still, you should try and make the bookings first without being too worried about what other people are saying. The only thing is that you may have to settle for a less luxurious hotel and all the hotels will probably charge a peak season rate.
